Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 3/4 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 1/2 tsp baking soda
  • 1 tsp salt
  • 1 cup whole milk
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries, hulled and chopped
  • 1/2 cup granulated sugar (for filling)
  • 2 tbsp cornstarch
  • 2 tbsp water
  • 8 oz semi-sweet chocolate, chopped (for ganache)
  • 1 cup heavy cream (for ganache)
  • Fresh strawberries (for decoration)
  • Chocolate shavings or curls (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare three 8-inch round cake pans by greasing and lining with parchment paper.
  2. In a large mixing bowl, sift together the flour, sugar, cocoa powder, baking powder, baking soda, and salt. Add the milk, vegetable oil, eggs, and vanilla extract; mix until combined. Gradually stir in boiling water to achieve a smooth batter.
  3. Divide the batter among the prepared pans and bake for 30–35 minutes or until a toothpick comes out clean.
  4. Allow layers to cool in pans for 10 minutes before transferring to a wire rack to cool completely.
