Ingredients

Scale
  • 2 cups all-purpose flour
  • 1/4 cup cold unsalted butter
  • 1 packet (2 1/4 tsp) active dry yeast
  • 3/4 cup warm whole milk
  • 2 tbsp sugar
  • 1/2 cup ricotta cheese
  • 1/2 cup dark chocolate chips
  • 1/3 cup chopped roasted unsalted pistachios
  • Egg wash (1 egg + 1 tbsp water)

Instructions

  1. In a mixing bowl, combine flour, sugar, yeast, and salt. Gradually mix in warm milk until a sticky dough forms. Knead until smooth and elastic.
  2. Roll the dough into a rectangle. Place cold butter between parchment paper and flatten it. Position it on half of the dough and fold over to encase.
  3. Chill the dough for at least 30 minutes.
  4. Roll out again and fold into thirds like a letter; repeat this process two more times to create flaky layers.
  5. Mix ricotta, chopped pistachios, and dark chocolate chips in a bowl until well combined.
  6. Cut rolled dough into triangles, place filling at the base, and roll tightly into crescent shapes.
  7. Preheat oven to 375°F (190°C). Brush croissants with egg wash and bake for 20-25 minutes until golden brown.
