  3. In a bowl, mix all-purpose flour, cornstarch, baking soda, and sea salt; set aside.
  4. Using an electric mixer, beat together cooled butter with brown and granulated sugars until sandy.
  5. Add egg, egg yolk, and vanilla; mix until smooth.
  6. Stir in dry ingredients until just combined; avoid overmixing.
  7. Chill dough for at least one hour, preferably up to 72 hours.
  8. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  9. Form dough into balls; place on sheets spaced apart.
  10. Bake for 8-10 minutes until edges are golden but centers remain soft.
  11. Cool on sheets briefly before transferring to wire racks.
