  • 2 boneless skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • 3 tablespoons butter
  • 4 garlic cloves, minced
  • ½ cup chicken broth
  • 2 tablespoons lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped parsley
  • ½ teaspoon red pepper flakes (optional)

  • 2 cups chicken broth
  • ½ cup freshly grated parmesan cheese
  • 1 tablespoon chopped parsley


Instructions

  1. Season the chicken breasts with salt, pepper, and paprika.
  2. Heat olive oil in a large skillet over medium heat. Sear the chicken breasts for about 5–6 minutes per side until golden brown. Remove and set aside.
  3. In the same skillet, lower the heat. Add butter and minced garlic, sauté for 1–2 minutes until fragrant. Pour in chicken broth and lemon juice, scraping up any browned bits.
  4. Add lemon zest to the sauce mixture and simmer for about 3–4 minutes.
  5. Return the chicken to the pan and spoon some of the sauce over each piece. Let it simmer for about 2–3 minutes.
  6. In a medium saucepan, melt butter over medium heat. Add minced garlic and sauté for about 30 seconds.
  7. Stir in white rice and toast for about 1 minute.
  8. Pour in chicken broth and bring to a boil. Then reduce heat to low, cover, and simmer for approximately 15 minutes until rice is tender.
  9. Stir in freshly grated parmesan cheese and chopped parsley into the cooked rice.
  10. To serve, place rice on each plate topped with chicken and plenty of sauce.
