  • 1 ¼ pounds chicken cutlets (4 pcs from breast or thigh)
  • 1 cup panko breadcrumbs
  • ¼ cup sesame seeds
  • 1 teaspoon salt
  • 1 large egg
  • Fry oil
  • 4 slices turkey bacon (thick cut)
  • 2 shallots (peeled and sliced thin)
  • 3-4 cloves garlic (minced)
  • 2 tablespoons fresh grated ginger
  • 3 packets instant chicken ramen noodles
  • 15 ounces unsweetened coconut milk
  • 5 tablespoons white miso paste
  • 10 cups water
  • 2 cups fresh spinach leaves
  • Fried onions
  • Scallions
  • Furikake
  • Nori sheets
  • Sriracha
  • Gochujang sauce


Instructions

  1. Prepare your cooking space by setting out a large skillet and a 6-quart sauce pot.
  2. In one bowl, whisk an egg; in another, mix panko breadcrumbs with sesame seeds and salt.
  3. Coat chicken cutlets in the egg mixture, then dredge in the breadcrumb mixture.
  4. Heat oil in the skillet over medium heat and fry the chicken until golden brown on both sides.
  5. For the broth, sauté sliced turkey bacon, shallots, garlic, and ginger in the sauce pot.
  6. Add coconut milk, miso paste, water, and seasoning packets from instant ramen; bring to a boil.
  7. Cook instant ramen noodles in the broth and stir in fresh spinach leaves.
  8. Slice fried chicken katsu and serve over ramen with desired toppings.
