- 4 boneless, skinless chicken breasts
- 4 slices of chicken ham
- 4 slices of Swiss cheese
- ½ cup all-purpose flour
- 2 large eggs, beaten
- 1 cup breadcrumbs (panko or regular)
- Salt and pepper to taste
- 2 tbsp olive oil
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1 cup milk
- 1 tsp Dijon mustard
- ½ cup grated Parmesan cheese
Instructions
- Preheat your oven to 375°F (190°C).
- Pound each chicken breast to about ¼ inch thickness. Layer with chicken ham and Swiss cheese. Roll tightly and secure with toothpicks.
- Dredge each roll in flour seasoned with salt and pepper, dip in beaten eggs, then coat with breadcrumbs.
- Heat olive oil and butter in a skillet over medium heat. Sear each roll for 2–3 minutes on each side until golden brown.
- Transfer to a baking dish and bake uncovered for 20–25 minutes until the internal temperature reaches 165°F (74°C).
- For the sauce: In a saucepan over medium heat, melt butter, whisk in flour, gradually add milk until smooth. Stir in Dijon mustard and grated Parmesan cheese until thickened.
- Remove toothpicks from the rolls, slice, drizzle with sauce, garnish with parsley if desired.
