Ingredients

  • 1 lb boneless, skinless chicken breast
  • 2 cups cabbage
  • 1 large carrot (julienned)
  • 1/2 bunch green onions
  • 4 Tbsp plant-based oyster sauce (or alternative)
  • 3 Tbsp low sodium soy sauce
  • 3 Tbsp light sesame oil
  • 1/2 cup chicken broth
  • 1 Tbsp corn starch
  • 1 Tbsp granulated sugar
  • 3 Tbsp oil
  • 12 oz chow mein noodles (uncooked)
  • 2 garlic cloves


Instructions

  1. In a mixing bowl, whisk together oyster sauce, sugar, sesame oil, soy sauce, chicken broth, and cornstarch until smooth. Set aside.
  2. Cook chow mein noodles according to package instructions; drain and rinse with cold water.
  3. Heat oil in a large wok over medium heat. Add chicken strips and sauté until golden brown; remove from pan.
  4. In the same wok, sauté julienned carrots, cabbage, and garlic until softened.
  5. Return chicken and noodles to the pan. Pour in the prepared sauce and stir well. Cook for an additional 2 minutes until heated through.
  6. Garnish with chopped green onions before serving.
