- 1 lb boneless, skinless chicken breast
- 2 cups cabbage
- 1 large carrot (julienned)
- 1/2 bunch green onions
- 4 Tbsp plant-based oyster sauce (or alternative)
- 3 Tbsp low sodium soy sauce
- 3 Tbsp light sesame oil
- 1/2 cup chicken broth
- 1 Tbsp corn starch
- 1 Tbsp granulated sugar
- 3 Tbsp oil
- 12 oz chow mein noodles (uncooked)
- 2 garlic cloves
Instructions
- In a mixing bowl, whisk together oyster sauce, sugar, sesame oil, soy sauce, chicken broth, and cornstarch until smooth. Set aside.
- Cook chow mein noodles according to package instructions; drain and rinse with cold water.
- Heat oil in a large wok over medium heat. Add chicken strips and sauté until golden brown; remove from pan.
- In the same wok, sauté julienned carrots, cabbage, and garlic until softened.
- Return chicken and noodles to the pan. Pour in the prepared sauce and stir well. Cook for an additional 2 minutes until heated through.
- Garnish with chopped green onions before serving.
