Ingredients
- Extra-virgin olive oil
- 2 cups white rice
- 1 large onion
- 2 cups low-sodium chicken broth
- 2 cans cream of mushroom soup
- 4 large chicken thighs (bone-in, skin-on)
- Fresh thyme
- Garlic
- Fresh parsley for garnish
Instructions
- Preheat oven to 350°F (175°C) and grease a 9″x13″ baking dish with olive oil.
- In the baking dish, combine rinsed rice, chopped onion, chicken broth, and cream of mushroom soup. Season with salt and pepper.
- Place chicken thighs skin side up on top of the rice mixture, brush with melted butter, and sprinkle thyme and garlic over the top.
- Cover with foil and bake for 1 hour. Uncover and bake for an additional 30 minutes until chicken is cooked through and rice is tender.
- Broil for an additional 3-5 minutes for crispy skin. Garnish with fresh parsley before serving.
