- 2 pounds fresh spinach
- 1 medium onion
- 3 cloves garlic
- 2 tablespoons olive oil
- 1 cup ricotta cheese
- 1 cup shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 large eggs
- Salt and pepper to taste
- ¼ cup breadcrumbs
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
- In a large skillet, heat olive oil over medium heat. Sauté chopped onion until soft; add garlic and cook until fragrant.
- Gradually add spinach until wilted; drain excess liquid.
- In a mixing bowl, combine ricotta, mozzarella, Parmesan, eggs, salt, pepper, and Italian seasoning. Mix until well incorporated.
- Fold in the cooled spinach mixture and transfer to the prepared baking dish. Top with breadcrumbs.
- Bake for 25–30 minutes until bubbly and golden brown. Let cool before serving.
