  • 1 medium onion
  • 3 cloves garlic
  • 2 tablespoons olive oil
  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • Salt and pepper to taste
  • ¼ cup breadcrumbs


Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a large skillet, heat olive oil over medium heat. Sauté chopped onion until soft; add garlic and cook until fragrant.
  3. Gradually add spinach until wilted; drain excess liquid.
  4. In a mixing bowl, combine ricotta, mozzarella, Parmesan, eggs, salt, pepper, and Italian seasoning. Mix until well incorporated.
  5. Fold in the cooled spinach mixture and transfer to the prepared baking dish. Top with breadcrumbs.
  6. Bake for 25–30 minutes until bubbly and golden brown. Let cool before serving.
