Ingredients
For the Salad:
4 cups fresh celery, chopped
1 cup cherry tomatoes, halved
1 cup cucumber, diced
1/2 cup red onion, thinly sliced
1/4 cup fresh parsley, chopped
For the Dressing:
2 tablespoons lemon juice, freshly squeezed
2 tablespoons olive oil
Salt and pepper, to taste
Instructions
In a large bowl, combine the chopped celery, cherry tomatoes, diced cucumber, sliced red onion, and parsley.
In a small bowl, whisk together the lemon juice, olive oil, salt, and pepper until well combined.
Pour the dressing over the salad and toss gently to coat all the ingredients evenly.
Taste and adjust seasoning with additional salt and pepper if needed.
Serve immediately or chill in the refrigerator for 15–20 minutes before serving for enhanced flavor.
