Ingredients

  • 1.5 kg beef shoulder
  • 2 tbsp olive oil or coconut oil
  • 1 large yellow onion
  • 4 cloves garlic
  • 1 scotch bonnet pepper
  • 2 tbsp fresh thyme leaves
  • 2 tsp ground allspice
  • 1 tsp smoked paprika
  • 400 ml canned coconut milk
  • 500 ml chicken or vegetable broth
  • 2 tbsp tomato paste
  • 2 large sweet potatoes
  • 1 large red bell pepper
  • 1 large green bell pepper
  • 2 carrots
  • 1 lime
  • salt and freshly ground black pepper
  • fresh chopped cilantro or parsley


Instructions

  1. Sear the beef in a heavy-bottomed pot over medium-high heat until browned on all sides; remove and set aside.
  2. In the same pot, cook diced onion until soft, then add minced garlic, thyme, allspice, and smoked paprika for one minute.
  3. Deglaze the pot with tomato paste and a quarter of the broth, scraping up browned bits.
  4. Return beef to the pot along with remaining broth, scotch bonnet pepper, and coconut milk; bring to a boil then reduce heat to simmer for about 1 hour and 15 minutes.
  5. Add cubed sweet potatoes, chopped bell peppers, and sliced carrots; simmer for an additional 45 minutes until everything is tender.
  6. Remove scotch bonnet pepper and stir in fresh lime juice before serving.
