  • 2 tsp vegetable oil
  • 1 lb lean ground beef
  • 1 medium yellow onion, diced
  • 2 cloves garlic, minced
  • 4 cups chopped green cabbage
  • 2 medium carrots, quartered and sliced
  • 3 cans (8 oz each) tomato sauce
  • 4 cups low-sodium beef broth
  • 1/2 cup uncooked white rice
  • 3 tbsp light brown sugar
  • Fresh parsley for garnish


Instructions

  1. In a large pot, heat vegetable oil over medium-high heat. Add ground beef, seasoning with salt and pepper. Cook until browned.
  2. Add diced onion and minced garlic; cook until onions are tender.
  3. Stir in cabbage, carrots, tomato sauce, beef broth, rice, bay leaf, and brown sugar.
  4. Bring to a simmer and cook uncovered for about 25 minutes until the rice is tender.
  5. Remove bay leaf and garnish with fresh parsley before serving.
