  • 1/4 cup Cornstarch
  • 1/4 teaspoon Salt (for pudding)
  • 1 cup Water (for pudding)
  • 1 cup Heavy Cream (for frosting)
  • 8 ounces Semisweet or Bittersweet Chocolate
  • 4 ounces Unsweetened Chocolate
  • 4 cups Confectioners Sugar
  • 2 teaspoons Vanilla Extract (for frosting)


Instructions

  1. Preheat your oven to 350°F (175°C) and prepare two 9-inch round cake pans by greasing them and lining with parchment paper.
  2. In one bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt. In another bowl, cream together unsalted butter and sugar until light and fluffy.
  3. Add eggs, egg yolk, buttermilk, vanilla extract, and hot coffee to the butter mixture; mix until combined.
  4. Gradually add dry ingredients to wet ingredients until just blended.
  5. Pour the batter into prepared pans and bake for 30–35 minutes or until a toothpick comes out clean.
  6. For the pudding filling, whisk sugar, cornstarch, and salt in a saucepan; gradually stir in water until thickened. Mix in melted chocolates.
  7. Assemble the cake by layering one cake on a plate with half the pudding filling on top followed by the second layer. Top with remaining pudding.
  8. Beat heavy cream with confectioners sugar until peaks form; frost the entire cake generously.
