Ingredients
- ½ cup thinly sliced scallions
- 2 cups Carolina long-grain rice
- Salt
- Pepper
- ¼ cup canola oil
- 1 cup full-fat, unsweetened canned coconut milk
Instructions
- In a medium saucepan, combine coconut milk, 2 teaspoons of salt, 1/4 teaspoon of pepper, and 1 cup of water. Bring to a boil.
- Stir in the rice and return to a boil. Lower the heat, cover, and cook for about 18 minutes until liquid is absorbed.
- Let the rice sit covered for 5 minutes before fluffing with a fork. Spread on a baking sheet to cool for 30 minutes.
- Mix cooled rice with chopped scallions in a bowl.
- Heat canola oil in a skillet over high heat. Press rice mixture into an even layer and cook until golden brown (approximately 5 minutes). Flip and repeat for the other side.
