Ingredients

  • ½ cup thinly sliced scallions
  • 2 cups Carolina long-grain rice
  • Salt
  • Pepper
  • ¼ cup canola oil
  • 1 cup full-fat, unsweetened canned coconut milk


Instructions

  1. In a medium saucepan, combine coconut milk, 2 teaspoons of salt, 1/4 teaspoon of pepper, and 1 cup of water. Bring to a boil.
  2. Stir in the rice and return to a boil. Lower the heat, cover, and cook for about 18 minutes until liquid is absorbed.
  3. Let the rice sit covered for 5 minutes before fluffing with a fork. Spread on a baking sheet to cool for 30 minutes.
  4. Mix cooled rice with chopped scallions in a bowl.
  5. Heat canola oil in a skillet over high heat. Press rice mixture into an even layer and cook until golden brown (approximately 5 minutes). Flip and repeat for the other side.
