  • 1 large egg + 5 large yolks
  • ⅓ cup honey
  • Kosher salt
  • 4 tablespoons unsalted butter (cut into 4 pieces and chilled)
  • 2 tablespoons heavy cream
  • 10 ounces (2 cups) blueberries
  • 2 tablespoons cornstarch
  • ¼ cup honey


Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix flour, confectioners' sugar, and salt. Cut in chilled butter until crumbly. Add egg yolk, heavy cream, and vanilla; mix until dough forms. Press into tart pan and bake for 20 minutes until golden.
  2. For lemon curd: In a saucepan on medium heat, combine lemon zest and juice with honey and salt. Whisk in eggs until blended. Cook on low heat while stirring until thickened (10 minutes). Stir in chilled butter until smooth. Pour into cooled crust and refrigerate.
  3. For blueberry filling: Combine blueberries with honey and cornstarch in a saucepan over medium heat. Stir gently until thickened (5-7 minutes). Cool slightly before pouring over lemon curd layer.
