  • 2/3 cup frozen wild blueberries
  • 3 cups powdered sugar
  • 1/4 cup + 2-3 tablespoons whole milk
  • 1/4 cup freeze-dried blueberry powder
  • 1 teaspoon blueberry emulsion or extract


Instructions

  1. In a medium bowl, whisk together the flour, baking powder, and salt; set aside.
  2. In a large bowl, mix sugar, melted butter, buttermilk, egg, sour cream, and vanilla until well combined.
  3. Gently fold dry ingredients into wet mixture until just combined. Carefully add frozen blueberries; cover and refrigerate for 30 minutes.
  4. Heat oil in a Dutch oven to 355°F (180°C). Set up a wire rack over paper towels.
  5. Using a scoop, fry donut dough in batches for about 3 minutes until golden brown; transfer to the rack.
  6. For the glaze, whisk powdered sugar, freeze-dried blueberry powder, milk, and blueberry extract until smooth; warm slightly if needed.
  7. Dunk each donut into the glaze and let excess drip off before serving.
