  • 1 lb mafaldine noodles (or fettuccini/linguini)
  • 3 chicken breasts
  • 4 tablespoons olive oil
  • 6 tablespoons butter
  • 6-8 cloves garlic, minced
  • 2 cups heavy whipping cream
  • 1.5 cups shredded parmesan cheese
  • 4 tablespoons blackened seasoning, divided
  • Salt and pepper to taste


Instructions

  1. Prepare chicken by pounding it to an even thickness. Rub with olive oil and season both sides generously with blackened seasoning.
  2. Heat skillet over medium-high heat; add olive oil. Cook chicken for 3-4 minutes until dark amber color appears, then flip and lower heat.
  3. Add butter and garlic to skillet; cook for an additional 5-6 minutes or until chicken reaches an internal temperature of 165°F.
  4. Remove chicken from skillet to rest before slicing.
  5. In the same skillet, melt remaining butter, sauté garlic, then pour in heavy cream and remaining seasoning; bring to a simmer.
  6. Cook pasta according to package instructions; reserve some pasta water before draining.
  7. Stir parmesan into the sauce until melted. Combine with cooked noodles and reserved pasta water, then top with sliced chicken.
