  • 3 1/2 cups powdered sugar (for frosting)
  • 1 cup fresh blackberries, reduced to 1/3 cup puree (for frosting)
  • 4 ounces cream cheese, room temperature (for frosting)
  • 1 teaspoon pure vanilla extract (for frosting)
  • Pinch of salt (for frosting)
  • Extra fresh blackberries (for decoration)
  • Edible flowers, optional (for decoration)
  • Fresh mint leaves, optional (for decoration)


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a large mixing bowl, cream the unsalted butter and granulated sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition. Stir in buttermilk, vanilla extract, and lemon zest if using.
  4. In another bowl, whisk together all-purpose flour, baking powder, baking soda, and salt.
  5. Gradually add dry ingredients to wet ingredients until just combined. Gently fold in fresh blackberries into the batter.
  6. Divide batter evenly between prepared pans. Bake in preheated oven for about 32 minutes or until a toothpick inserted into the center comes out clean.
  7. Let the cakes cool in pans for about 10 minutes before transferring them to a cooling rack to cool completely.
  8. In a mixing bowl, beat cream cheese and unsalted butter until creamy. Add powdered sugar gradually while mixing. Stir in blackberry puree, vanilla extract, and salt until smooth.
