  • 1 cup granulated sugar (for filling)
  • 1/4 cup all-purpose flour (for filling)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp salt
  • 6 tbsp heavy cream
  • 1/2 tsp vanilla extract (optional)
  • 1/4 cup packed brown sugar (preferably dark)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease your baking dish lightly or line it with parchment paper for easy removal.
  2. In a mixing bowl, combine the flour, granulated sugar, and salt. Add the cold diced butter to the mixture. Use a pastry cutter or fork to blend until it resembles coarse crumbs. Reserve one cup of this mixture for later use as topping. Press the remaining mixture evenly into the bottom of your prepared baking dish.
  3. In another bowl, mix together chopped peaches, granulated sugar, flour, cinnamon, and salt until well combined. Pour this peach mixture over the crust in your baking dish.
  4. Sprinkle reserved crumb mixture evenly over the peach filling. Drizzle heavy cream on top and add vanilla extract if desired. Finally, sprinkle brown sugar over everything for added sweetness.
