  • 1.5 cups fresh berries (about 1 cup blueberries and 0.5 cup raspberries)
  • For the Cream Cheese Filling: 6 oz cream cheese, room temperature
  • 3 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon cornstarch


Instructions

  1. Preheat your oven to 425°F and line a muffin pan with paper liners.
  2. In one bowl, mix together flour, brown sugar, and salt for the crumb topping. Add melted butter until coarse crumbs form; set aside.
  3. In another bowl, beat together cream cheese, granulated sugar, cornstarch, and vanilla until smooth; set aside.
  4. Combine flour, baking powder, and salt in a large bowl.
  5. In a separate bowl, whisk egg with granulated sugar until pale. Mix in yogurt, oil, and vanilla.
  6. Fold wet ingredients into dry ingredients until just combined.
  7. Gently fold in half of the berries (reserve the rest).
  8. Fill each muffin cup with a tablespoon of batter; add cream cheese filling followed by more batter and reserved berries on top.
  9. Sprinkle streusel over each muffin and bake at reduced temperature of 350°F for about 30–35 minutes or until golden brown.
