  • 1 1/2 cups mashed bananas (about 4 medium)
  • 8 oz. cream cheese, softened
  • 2 ½ oz. instant banana pudding mix
  • 1 cup granulated sugar
  • 1/4 cup vegetable oil
  • 2 large eggs
  • 1 tsp. vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 tsp. baking soda
  • ¼ tsp. salt
  • 10 vanilla wafers, chopped
  • 3 TBSP instant banana pudding mix (for glaze)
  • ¼ cup milk (for glaze)
  • 1 cup powdered sugar (for glaze)
  • 3 vanilla wafers, finely crushed (for topping)


Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a stand mixer, beat cream cheese and pudding mix until smooth; add egg and vanilla extract, mixing until combined. Fold in chopped vanilla wafers.
  3. In another bowl, whisk together flour, baking soda, and salt. In the stand mixer, combine mashed bananas and sugar; mix on high for about 3 minutes. Add oil and eggs one at a time before gradually incorporating the flour mixture.
  4. Grease a loaf pan and pour half of the banana batter in; layer with pudding filling then top with remaining batter.
  5. Bake for 45-55 minutes or until a toothpick comes out clean.
  6. In a bowl, whisk together instant banana pudding mix and milk until smooth; mix in vanilla bean paste and powdered sugar until desired consistency is reached.
  7. Once baked, let your loaf cool on a wire rack before removing from pan. Pour glaze over top once cooled slightly and sprinkle crushed vanilla wafers on top.
