  • 1 medium Granny Smith apple, thinly sliced
  • 4 oz light Brie cheese, sliced

  • ¼ tsp black pepper
  • ¼ tsp dried thyme
  • 1 tbsp olive oil
  • 1 tbsp maple syrup
  • 1 tbsp creamy Dijon mustard
  • 1 tsp whole grain Dijon mustard

  2. Slice each chicken breast horizontally to create a pocket; do not cut all the way through.
  3. Stuff each chicken breast with apple slices and Brie slices, then fold them back.
