  • 6 Rice wrappers
  • 1 cup Rice noodles or vermicelli rice noodles
  • 1 cup Baby bok choy
  • 1 cup Carrots (thinly sliced)
  • 1 cup Cucumbers (thinly sliced)
  • 1 cup Red cabbage (thinly sliced)
  • 1 cup Bell peppers, any color (thinly sliced)
  • ½ cup Radishes (thinly sliced)
  • ½ cup Pea pods
  • ⅓ cup Mint leaves
  • ½ cup creamy peanut butter
  • 2 tablespoons rice vinegar
  • ⅓ cup tamari
  • ½ teaspoon sriracha or chili paste (more if you like it spicy)
  • 2 tablespoons organic granulated sugar (or maple syrup)
  • 2 tablespoons toasted sesame oil
  • 1 clove garlic
  • ½ teaspoon grated fresh ginger


Instructions

  1. Cook rice noodles as per package instructions; drain and rinse under cold water.
  2. Thinly slice all vegetables and arrange them in bowls for easy access.
  3. In a bowl, mix peanut butter, rice vinegar, tamari, sriracha, sugar (or maple syrup), sesame oil, minced garlic, and grated ginger until smooth.
  4. Soak one rice wrapper in warm water for about 10 seconds until pliable; place on a damp board.
  5. Add a small amount of noodles and selected vegetables in the center; top with mint leaves.
  6. Fold sides over the filling and roll tightly away from you. Repeat with remaining ingredients.
  7. Serve on a platter with the dipping sauce alongside.
