  • 1 lb shrimp, peeled, deveined, and chopped into small pieces
  • 1/2 cup rice flour
  • 1/4 cup all-purpose flour
  • 1/4 teaspoon baking powder
  • 1/2 cup cold water
  • 1 egg
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 2 green onions, finely chopped
  • 1/4 cup cilantro, chopped
  • 1/4 cup fresh mint leaves, chopped (optional)
  • 1-2 small red chilies, finely chopped (optional)
  • Vegetable oil for frying
  • 3 tablespoons fish sauce
  • 1 tablespoon sugar
  • 2 tablespoons lime juice, freshly squeezed
  • 1/4 cup warm water
  • 1 garlic clove, minced
  • 1-2 small red chilies, finely chopped (optional)
  • 1 tablespoon rice vinegar, optional for extra tang


Instructions

  1. In a mixing bowl, combine the rice flour, all-purpose flour, baking powder, salt, and black pepper.
  2. In another bowl, whisk together the cold water, egg, green onions, cilantro, mint leaves (if using), and chopped red chilies (if using).
  3. Gradually add the dry ingredient mixture into the wet mixture while stirring until you achieve a smooth batter.
  4. Gently fold in the chopped shrimp into the batter until well combined.
  5. In a frying pan or deep fryer, heat about 1 inch of vegetable oil over medium-high heat until hot but not smoking.
  6. Using a slotted spoon or small ladle, drop spoonfuls of batter into the hot oil. Fry in batches until golden brown on both sides (about 3-4 minutes per side).
  7. Remove fritters from oil and drain on paper towels to remove excess oil.
  8. In a small bowl, combine fish sauce, sugar, lime juice, warm water, minced garlic, and red chilies (if using). Stir until sugar dissolves.
  9. Serve hot shrimp fritters with the Nuoc Cham dipping sauce on the side.
