  • 2-3 slices fresh tomato (plus extra for the salad)

  • Salt & freshly cracked black pepper, to taste
  • 1 cup cucumber slices
  • 1 cup chopped lettuce

  2. In a skillet over medium heat, add olive oil and cook the stuffed chicken for 5-6 minutes on each side until golden brown and fully cooked.
  3. In a mixing bowl, combine cucumber slices, chopped lettuce, and additional tomato slices. Toss gently with lemon juice or vinaigrette.
