  • 35 chocolate creme cookies
  • 5 tbsp unsalted butter
  • 24 oz cream cheese
  • 8 oz mascarpone cheese
  • 1 ½ cups granulated sugar
  • 4 large eggs
  • ½ cup heavy cream
  • 1 cup sour cream
  • 12 ladyfinger biscuits
  • Strong black coffee


Instructions

  1. Preheat the oven to 350°F (175°C) and prepare a springform pan by greasing it.
  2. Crush chocolate cookies and mix with melted butter to form the crust. Bake for 7–8 minutes and let cool.
  3. Lower the oven temperature to 320°F (160°C). Beat cream cheese, mascarpone, sugar, vanilla essence, and salt until smooth. Gradually add eggs and mix gently.
  4. Incorporate heavy cream, sour cream, and cornstarch until blended.
  5. Pour half the batter over the crust, layer coffee-dipped ladyfingers on top, then add remaining batter.
  6. Bake in a water bath for about 80 minutes until edges are set.
  7. Cool at room temperature for 15 minutes before refrigerating overnight.
  8. Prepare topping by whisking cold mascarpone with sugar and dissolved coffee; fold in whipped cream.
  9. Spread topping on cheesecake and dust with cocoa powder before serving.
