Ingredients

  • 1 medium sweet potato
  • 1 tsp olive oil
  • Salt & pepper to taste
  • 150g lean ground beef
  • 1 tsp smoked paprika
  • 1 tsp garlic powder
  • 1 avocado, sliced
  • 1 cup cottage cheese
  • 1-2 tsp honey (for drizzling)


Instructions

  1. Preheat the oven to 200C (400F). Cube the sweet potato and toss it with olive oil, salt, and pepper. Spread on a baking sheet and roast for 20-25 minutes until golden.
  2. In a skillet over medium heat, cook the ground beef until browned, seasoning with smoked paprika, garlic powder, salt, and pepper.
  3. In a mixing bowl, layer the roasted sweet potatoes first, followed by cooked beef, sliced avocado, and cottage cheese.
  4. Drizzle honey over the top and finish with black pepper.
