  • 1 tablespoon lemon juice

  • ⅔ cup granulated sugar
  • ½ teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon coarse salt
  • 1 teaspoon granulated sugar
  • 1 cup unsalted butter (cold and cut into cubes)
  • 4-5 tablespoons cold water
  • 1 cup strawberry preserves
  • Double pie crust
  • 1 cup powdered sugar
  • 1-2 tablespoons heavy cream or milk
  • Rainbow sprinkles (optional)


Instructions

  1. In a medium bowl, combine sliced strawberries, lemon juice, lemon zest, granulated sugar, and vanilla extract. Stir gently until the strawberries are coated. Set aside to let the flavors meld.
  2. In a large mixing bowl, whisk together all-purpose flour, coarse salt, and granulated sugar. Add the cold butter cubes to the flour mixture. Use a pastry cutter or fork to blend until it resembles coarse crumbs. Gradually add cold water until the mixture forms a dough ball. Wrap it in plastic wrap and refrigerate for at least 30 minutes.
  3. Preheat your oven to 375°F (190°C). On a floured surface, roll out half of the dough into a rectangle about 1/8 inch thick. Cut into rectangles (approximately 3×4 inches). Repeat with remaining dough.
  4. Place rectangles on a baking sheet lined with parchment paper. On half of each rectangle, spoon some strawberry filling and top with another rectangle of dough. Seal edges by pressing down with fingers or using a fork. Optionally brush tops with egg wash.
  5. Bake your creations in the preheated oven for about 25-30 minutes until golden brown.
  6. In a bowl, mix powdered sugar with heavy cream or milk until desired consistency is reached. Once cool, drizzle icing over pop tarts and add rainbow sprinkles if desired.
