  • 2 large eggs
  • 1 cup whole milk
  • ½ cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup boiling water
  • 2 cups fresh strawberries (chopped)
  • ¼ cup granulated sugar
  • 1 tbsp lemon juice
  • 1 tbsp cornstarch mixed with 1 tbsp water
  • 8 oz semi-sweet chocolate (chopped)
  • 1 cup heavy cream
  • Fresh strawberries (for garnish)
  • Chocolate shavings


Instructions

  1. Preheat your oven to 350°F (175°C) and grease two 9-inch round cake pans.
  2. In a mixing bowl, combine flour, cocoa powder, sugar, baking powder, baking soda, and salt; whisk until well mixed.
  3. In another bowl, beat eggs lightly; add milk, vegetable oil, and vanilla extract; mix until smooth.
  4. Gradually combine the wet ingredients with the dry ingredients while stirring gently. Finally, stir in boiling water until smooth.
  5. Pour the batter evenly into the prepared pans and bake for about 30 minutes or until a toothpick inserted comes out clean. Cool in pans for 10 minutes before transferring to a cooling rack.
  6. For the strawberry filling, cook chopped strawberries with sugar over medium heat until syrupy; stir in lemon juice and cornstarch mixture to thicken.
  7. For the ganache, heat cream until just boiling; pour over chopped chocolate and whisk until smooth.
  8. Once cakes are completely cooled, layer them with strawberry filling in between and frost with ganache.
