- 1 ripe avocado
- 2 eggs
- 2 slices smoked salmon
- Small handful of alfalfa or broccoli sprouts
- 1 apple, sliced

- Salt & black pepper, to taste
Instructions
- Toast the bread until golden brown. Spread mashed avocado on each slice and season lightly with salt.
- In a frying pan over medium heat, fry the eggs to your liking and place one egg on each slice of toast.
