  • 1 large bone-in lamb shoulder (about 4.5 lbs)
  • 6 cloves garlic, halved
  • 2 tablespoons fresh rosemary, chopped
  • 2 tablespoons fresh thyme, chopped
  • 2 tablespoons fresh oregano, chopped
  • 1 tablespoon coarse sea salt
  • 1 teaspoon black pepper
  • Honey (for glaze)


Instructions

  1. Preheat your oven to 325°F (160°C). Pat the lamb shoulder dry and season generously with salt and pepper.
  2. Place halved garlic cloves around the lamb in a roasting pan and sprinkle with rosemary, thyme, and oregano.
  3. Cover the pan tightly with aluminum foil and roast for about 4 hours or until tender (internal temperature should reach at least 145°F / 63°C).
  4. Optional: Mix honey with additional herbs for glaze; brush over lamb during the last 30 minutes of roasting.
  5. Allow to rest for 15 minutes before slicing. Serve with caramelized onions if desired.
