  • 2 tbsp vegetable or coconut oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp curry paste
  • 1 can (14 oz) coconut milk
  • Fresh cilantro, for garnish
