  • 1 handful fresh spinach
  • 45 mushrooms (button or cremini), sliced
  • 1 small tomato, halved
  • 1 slice sourdough or whole-grain bread
  • 1 tsp olive oil or butter
  • Salt & pepper to taste
  • Fresh parsley (optional, for garnish)
  • 1 ripe avocado


Instructions

  1. In a skillet over medium heat, add olive oil or butter and sauté sliced mushrooms for 5-7 minutes until golden and tender. Season with salt and pepper.
  2. Add spinach to the same skillet and wilt for about 1-2 minutes until soft; season lightly with salt.
  3. Halve the tomato; roast at 400°F (200°C) for 10 minutes or sear face-down in a hot pan until charred.
  4. Toast the bread to your desired crispiness.
  5. Fry the eggs sunny-side-up in a non-stick pan until whites are set and yolks are runny.
  6. Assemble your plate: layer toasted bread with sautéed mushrooms, fried eggs, wilted spinach, roasted tomato halves, and fanned avocado slices. Garnish with fresh parsley if desired.
