  • ½ cup heavy cream
  • ⅓ cup chicken broth
  • 1 tablespoon Creole seasoning blend
  • Salt to taste
  • 1 teaspoon freshly ground black pepper
  • 2 tablespoons fresh parsley, finely chopped
  • ¼ cup bell peppers, chopped
  • ¼ cup onions, diced
  • ¼ cup ripe tomatoes, diced (optional)
  • A pinch of cayenne pepper


Instructions

  1. Rinse and pat dry the red snapper fillets, then season both sides with salt, pepper, and Creole seasoning.
  2. Heat olive oil in a sauté pan over medium-high heat and sear the fish for about 3 minutes on each side until golden brown.
  3. Transfer the fish to a baking pan and cook in a preheated oven at 350°F for about 15 minutes until it reaches an internal temperature of 130°F.
  4. In the same sauté pan, melt butter and sauté chopped onions, bell peppers, and tomatoes until softened.
  5. Stir in tomato paste and heavy cream, adjusting thickness with chicken broth if necessary. Simmer for about 5 minutes.
  6. Serve the sauce over the cooked fish and garnish with fresh parsley.
