  • 1/2 cup grated Parmesan cheese
  • 1 cup sliced fresh mushrooms (cremini or button)
  • 4 oz crumbled feta cheese
  • 8 oz cream cheese, softened
  • 1/2 cup sour cream
  • 3 large eggs


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a food processor, blend the crushed pistachios and grated Parmesan until mixed. Press into the bottom of a greased springform pan.
  3. Sauté sliced mushrooms in olive oil until golden brown; let cool.

  5. Gently fold in cooled mushrooms and feta into the cream cheese mixture.
