Ingredients

Scale
  • 1 cup (3 sticks) unsalted butter, softened
  • 8 oz cream cheese, softened
  • 3 cups granulated sugar
  • 6 large eggs, room temperature
  • 3 cups all-purpose flour
  • teaspoon baking powder
  • teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup crushed pineapple, well drained (reserve juice for glaze)
  • 1 cup powdered sugar
  • 2-3 tablespoons reserved pineapple juice
  • 1 teaspoon lemon juice (optional, for brightness)

Instructions

  1. Preheat your oven to 325°F (163°C) and grease a 10-inch bundt pan.
  2. In a mixing bowl, cream together softened butter, cream cheese, and granulated sugar until light and fluffy. Add eggs one at a time, mixing well.
  3. Combine flour, baking powder, and salt in another bowl; gradually add to the butter mixture until just combined. Stir in vanilla and drained crushed pineapple.
  4. Pour the batter into the prepared bundt pan and smooth the top.
  5. Bake for 80-90 minutes or until a toothpick inserted comes out clean. Cool for 15 minutes in the pan before transferring to a wire rack.
  6. For the glaze, whisk together powdered sugar with reserved pineapple juice and lemon juice until smooth; drizzle over cooled cake.
