  • 1 cup packed light brown sugar
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 tablespoon pure vanilla extract
  • 1 ½ cups all-purpose flour
  • 1 cup Hershey’s Special Dark Cocoa powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 12 oz semi-sweet chocolate chips (for dough)
  • 6 tablespoons unsalted butter (for filling)
  • 1 cup creamy peanut butter
  • 1 ½ -2 cups powdered sugar
  • 12 oz dark chocolate chips (for ganache)
  • ¾ cup heavy whipping cream


Instructions

  1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a mixing bowl, combine melted butter, brown sugar, and granulated sugar; mix until smooth. Add eggs one at a time and vanilla.
  3. In another bowl, whisk flour, cocoa powder, salt, and baking soda. Gradually mix into the wet ingredients and fold in chocolate chips.
  4. Scoop dough onto prepared sheets and bake for about 10 minutes until edges are set.
  5. For the filling, beat together unsalted butter and peanut butter until smooth; gradually add sifted powdered sugar and vanilla.
  6. Once cookies cool completely, spread peanut butter filling on half, sandwiching with another cookie.
  7. For ganache, heat dark chocolate chips with heavy cream until smooth; drizzle over cookies.
