  • 1/4 cup unsalted butter (softened)
  • 3/4 cup light brown sugar (packed)
  • 1/2 cup creamy peanut butter
  • 2 large eggs
  • 1/2 teaspoon vanilla extract
  • 1/4 cup sour cream
  • 1 1/2 cups mashed banana (about 3 or 4 medium overripe bananas)
  • Optional: 1/2 to 2/3 cups chopped nuts (pecans, walnuts, hazelnuts, or peanuts)


Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9" x 5" loaf pan or line it with parchment paper.
  2. In a mixing bowl, whisk together flour, cinnamon, baking powder, baking soda, and salt.
  3. In another bowl, beat the softened butter, brown sugar, and peanut butter until fluffy using an electric mixer on medium speed. Add eggs one at a time and mix well. Stir in vanilla extract.
  4. Gradually combine the dry ingredients with the wet mixture while alternating with sour cream until just mixed.
  5. Gently fold in the mashed bananas and optional chopped nuts.
  6. Pour the batter into the prepared pan and bake for about 50 to 55 minutes until golden brown and a toothpick comes out clean.
  7. Allow cooling in the pan for about 10 minutes before transferring to a wire rack to cool completely.
