  • 1 ½ pounds boneless, skinless chicken breasts
  • 8 ounces dry orzo
  • 2 cups chopped fresh asparagus
  • ½ cup diced yellow onion
  • 2 ½ cups low sodium chicken broth
  • ⅓ cup half and half (or milk)
  • ⅓ cup freshly grated Parmesan cheese
  • Fresh spinach
  • 1 teaspoon garlic powder
  • ¼ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon red pepper flakes
  • 2 tablespoons olive oil (divided)
  • 2 sprigs fresh thyme (can sub 1/4 teaspoon dried thyme)


Instructions

  1. 1. Season the chicken with garlic powder, salt, pepper, and red pepper flakes.
  2. 2. In a large pan, heat olive oil over medium-high heat. Cook the chicken until browned (10-12 minutes) and set aside.
  3. 3. In the same pan, sauté asparagus for about 2 minutes until tender-crisp. Remove from the pan.
  4. 4. Sauté onion until softened (about 3 minutes), then add orzo and minced garlic; toast for another 3 minutes.
  5. 5. Pour in chicken broth, bring to a simmer, cover, and cook until most liquid is absorbed (about 7 minutes).
  6. 6. Stir in cooked chicken, asparagus, half and half, Parmesan cheese, spinach, and thyme. Heat through for another minute.
  7. 7. Serve immediately garnished with parsley and extra Parmesan.
