  • 12 Tbsp. unsalted butter
  • 1 1/4 cups chocolate chips, divided
  • 3/4 cup cocoa powder
  • 1/2 tsp. salt
  • 3/4 cup sugar
  • 3/4 cup brown sugar, packed
  • 3 large eggs
  • 2 Tbsp. vegetable oil
  • 1 tsp. peppermint extract
  • 3/4 cup flour
  • 1 1/2 tsp. espresso powder (optional)
  • Peppermint candies/candy canes, crushed for garnish
  • 1/2 cup heavy cream
  • 1 tsp. unsalted butter
  • pinch of salt


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper.
  2. In a large bowl, melt the butter with ½ cup of chocolate chips in the microwave.
  3. Stir in cocoa powder, salt, and optional espresso powder until well combined.
  4. Add both sugars and mix well before incorporating eggs one at a time.
  5. Whisk in vegetable oil and peppermint extract.
  6. Gently fold in flour and remaining chocolate chips until just combined.
  7. Pour batter into the prepared pan and bake for 35-40 minutes until a toothpick comes out mostly clean.
  8. Allow brownies to cool completely before preparing ganache by heating heavy cream and mixing it with remaining chocolate chips.
  9. Spread ganache on cooled brownies and top with crushed peppermint candies. Chill until set before cutting into squares.
