- 12 Tbsp. unsalted butter
- 1 1/4 cups chocolate chips, divided
- 3/4 cup cocoa powder
- 1/2 tsp. salt
- 3/4 cup sugar
- 3/4 cup brown sugar, packed
- 3 large eggs
- 2 Tbsp. vegetable oil
- 1 tsp. peppermint extract
- 3/4 cup flour
- 1 1/2 tsp. espresso powder (optional)
- Peppermint candies/candy canes, crushed for garnish
- 1/2 cup heavy cream
- 1 tsp. unsalted butter
- pinch of salt
Instructions
- Preheat oven to 350°F (175°C). Grease and line an 8×8 inch baking pan with parchment paper.
- In a large bowl, melt the butter with ½ cup of chocolate chips in the microwave.
- Stir in cocoa powder, salt, and optional espresso powder until well combined.
- Add both sugars and mix well before incorporating eggs one at a time.
- Whisk in vegetable oil and peppermint extract.
- Gently fold in flour and remaining chocolate chips until just combined.
- Pour batter into the prepared pan and bake for 35-40 minutes until a toothpick comes out mostly clean.
- Allow brownies to cool completely before preparing ganache by heating heavy cream and mixing it with remaining chocolate chips.
- Spread ganache on cooled brownies and top with crushed peppermint candies. Chill until set before cutting into squares.
