Ingredients
- 140 g vegan cookies
- 45 g unsalted vegan butter
- ½ teaspoon sea salt
- 150 g cashews (soaked)
- 300 g vegan cream cheese
- 80 g vegan Greek-style yogurt
- 1 batch vegan passion fruit curd
Instructions
- Prepare the passion fruit curd ahead of time and refrigerate. Soak cashews for at least 4 hours, then rinse.
- Blend cookies, vegan butter, and salt in a food processor until crumbly. Press into a lined 9-inch loaf pan to form the crust.
- In a high-speed blender, mix the soaked cashews, vegan cream cheese, yogurt, vanilla extract, and 200g of passion fruit curd until smooth. Pour over the crust and chill for at least 6 hours.
- Gently heat the remaining passion fruit curd until spreadable and pour over the set cheesecake. Chill again before serving.
