  • 1.5 lbs beef chuck, cut into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cinnamon
  • 1 teaspoon ground turmeric
  • 1 teaspoon paprika
  • 1 teaspoon cayenne pepper (optional)
  • 1 can (14 oz) diced tomatoes
  • 4 cups beef broth
  • 1 can (15 oz) chickpeas, rinsed and drained
  • 3 large carrots, sliced
  • 1 red bell pepper, chopped
  • 1 zucchini, sliced
  • Salt and pepper to taste


Instructions

  1. Heat olive oil in a large pot or Dutch oven over medium-high heat. Brown the beef cubes on all sides (about 5-7 minutes). Remove and set aside.
  2. In the same pot, sauté chopped onion until softened (about 5 minutes). Add minced garlic and cook for another minute.
  3. Stir in spices and toast for 1-2 minutes until fragrant.
  4. Return the beef to the pot along with diced tomatoes and beef broth. Bring to a boil then reduce heat; cover and simmer for about an hour.
  5. Add chickpeas, carrots, red bell pepper, and zucchini; stir well. Season with salt and pepper as needed.
  6. Cover again and simmer for an additional 30 minutes until vegetables are tender.
  7. Serve hot with optional garnishes like fresh cilantro or parsley.
