  • 1/4 cup brown sugar
  • 1 can sliced pineapples (drained)
  • Maraschino cherries
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1 egg
  • 1/2 cup milk
  • 1 teaspoon vanilla extract


Instructions

  1. Preheat the oven to 350°F (175°C) and grease a muffin tin.
  2. In a saucepan over low heat, melt the unsalted butter and mix in brown sugar until smooth. Pour this mixture evenly into each muffin cup.
  3. Place a slice of pineapple in each muffin cup and top with a maraschino cherry.
  4. In a mixing bowl, cream together granulated sugar and egg until fluffy. Stir in milk and vanilla extract.
  5. In another bowl, whisk together flour, baking powder, and salt. Gradually combine wet and dry ingredients until just mixed.
  6. Spoon the batter over the pineapple layers in each muffin cup until three-quarters full.
  7. Bake for about 20 minutes or until a toothpick comes out clean. Allow to cool slightly before serving.
