Instructions

  1. In a food processor, combine flour, powdered sugar, and salt.
  2. Add cold butter and blend until pea-sized pieces form.
  3. Mix in egg and vanilla until a dough forms; avoid overmixing.
  4. Chill the dough for at least an hour, then roll it out on a floured surface.
  5. Cut out rounds to fit mini tart pans and press them in.
  6. Freeze for 20 minutes, poke holes in the bottoms, then bake at 350°F for 15-20 minutes until golden brown.
  7. Cool completely before filling with pastry cream made from heated milk, whisked egg yolks, sugar, cornstarch, and vanilla.
