  • 120 g heavy cream
  • 1 tbsp agave or honey
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/2 tsp salt


Instructions

  1. Preheat your oven to 180°C (350°F) and line a baking sheet with parchment paper.
  2. In a mixing bowl, cream together granulated sugar, butter, and lemon zest until fluffy. Add the egg and vanilla extract, mixing until combined.
  3. In another bowl, whisk together flour, baking powder, baking soda, poppy seeds, and salt. Gradually combine the dry ingredients with the wet mixture.
  4. Scoop tablespoon-sized portions onto the prepared baking sheet, leaving space between each cookie. Bake for about 10 minutes or until lightly golden.
  5. While cooling, prepare frosting by beating cold cream cheese until smooth. Mix in vanilla extract, powdered sugar, and agave or honey. Gradually add heavy cream until fluffy.
