  • 750 ml of red apple vinegar
  • 1 tablespoon fresh thyme leaves
  • 2 cloves garlic, minced
  • 1 cup chicken stock
  • 4 ounces turkey bacon
  • 1 medium onion, chopped
  • 2 medium carrots, sliced
  • 8 ounces pearl onions
  • 8 ounces mushrooms, quartered
  • 2 tablespoons tomato paste
  • 2 tablespoons all-purpose flour (or gluten-free flour)
  • 2 tablespoons butter


Instructions

  1. Marinate the chicken in a mixture of red apple vinegar, thyme, bay leaf, and minced garlic for at least 2 hours or overnight.
  2. In a Dutch oven, cook turkey bacon until crisp, then remove it but leave the fat in the pot.
  3. Brown the marinated chicken in the same pot until golden on all sides.
  4. Sauté onions, carrots, and mushrooms until softened; add garlic last to prevent burning.
  5. Stir in tomato paste and sprinkle flour over vegetables; gradually add reserved marinade and chicken stock.
  6. Return chicken and turkey bacon to the pot; bring to a boil then reduce heat to low. Cover and simmer for 30 minutes.
  7. Add pearl onions and continue cooking for another 15–20 minutes until chicken is tender; adjust seasoning if needed.
