  • 1 pound ground chicken
  • 1 egg
  • 1 tablespoon corn starch (or tapioca flour)
  • 4 tablespoons soy sauce (or tamari)
  • 3 tablespoons cooking apple vinegar (or broth)
  • 1-2 tablespoons sugar
  • 1 inch ginger (grated)
  • Oil (sesame or vegetable)


Instructions

  1. Prepare the sauce by mixing 3 tablespoons of soy sauce, vinegar, and sugar in a small bowl; set aside.
  2. In a large mixing bowl, combine ground chicken with grated ginger, soy sauce, egg, and corn starch. Knead until well mixed.
  3. Shape the mixture into 2-inch balls. Heat oil in a non-stick skillet over medium heat and add the meatballs. Cook until browned on all sides.
  4. Once browned, cover the skillet with a lid and reduce heat to allow cooking through for about 10 minutes.
  5. Remove the lid to drain excess oil; pour in the prepared sauce and cook on low heat until it thickens slightly. Roll meatballs to coat evenly.
  6. Serve on skewers, over rice, or with steamed vegetables.
