  • 3 lbs boneless, skinless chicken thighs
  • 2 tablespoons curry powder
  • 1 teaspoon smoked paprika
  • 2 teaspoons garlic powder
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 1 large carrot, diced
  • 1 bell pepper, sliced


Instructions

  1. Wash and chop all vegetables: dice the onion and carrot and slice the bell pepper. Cut the chicken into bite-sized pieces.
  2. Heat olive oil in a large skillet over medium heat until shimmering.
  3. Add the diced onion and sauté for 3-4 minutes until translucent. Then add the carrot and bell pepper; cook until tender.
  4. Add the chicken thighs to the skillet along with curry powder, smoked paprika, and garlic powder; stir well.
  5. Cover and reduce heat to low. Let it simmer for about 20-25 minutes until chicken is cooked through.
  6. Serve over steamed rice or with your favorite flatbread.
