  • 8 oz jar oil-packed sun-dried tomatoes
  • 1 large onion
  • 3 large carrots
  • 2 stalks celery
  • 5 cloves garlic
  • 1 tsp Italian seasoning
  • ½ tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp kosher salt
  • ½ tsp pepper
  • 2 Tbsp tomato paste
  • 1 Tbsp chicken base
  • 2 ½ Tbsp flour
  • 5 cups chicken broth
  • 1 can evaporated milk
  • 2 cups cooked chicken (shredded or chopped)
  • 3-4 oz baby spinach
  • 1 pound shelf-stable gnocchi


Instructions

  1. In a large pot or Dutch oven, heat sun-dried tomato oil over medium heat. Sauté the diced onion, carrots, and celery until softened (about 5 minutes).
  2. Add chopped sun-dried tomatoes, minced garlic, Italian seasoning, smoked paprika, onion powder, salt, and pepper. Sauté for another minute.
  3. Stir in tomato paste, chicken base, and flour; cook for an additional minute.
  4. Pour in chicken broth while scraping any browned bits from the bottom of the pot. Stir well.
  5. Bring to a simmer; cover partially and let simmer for about 15 minutes.
  6. Add cooked chicken, spinach, evaporated milk, and gnocchi. Cook on medium-low heat for another 5-10 minutes until heated through.
  7. Serve hot topped with grated parmesan cheese if desired.
