  • 1 cup packed brown sugar
  • 1/2 cup sugar
  • 1/4 cup water
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoons salt
  • 1/4 tsp. nutmeg
  • 3/4 tsp. cinnamon
  • 2 cups oats (quick cooking or old fashioned)
  • 4 tablespoons milk
  • 2 cups powdered sugar (sifted)
  • water (as needed)


Instructions

  1. In a large mixing bowl, cream together shortening and sugars until light and fluffy.
  2. Beat in water and vanilla extract until well combined.
  3. In a separate bowl, mix flour, baking soda, salt, nutmeg, and cinnamon. Gradually add to the creamed mixture until fully incorporated.
  4. Gently fold in oats until evenly distributed.
  5. Using a cookie scoop, drop rounded tablespoons of dough onto greased baking sheets.
  6. Bake at 350°F (175°C) for 10–12 minutes or until golden brown. Cool on wire racks.
  7. For the icing, combine milk and sifted powdered sugar; adjust consistency with water if necessary.
  8. Once cooled, dip each cookie into the icing and allow excess to drip off before placing them back on the rack.
